The theme of this sake, 2021BY, is "coexistence of sharpness and umami.
This is a fire-aged version of Sake Mirai NEW BORN Nama-zake, which was first released in March of this year using "Sake Mirai" produced in Yamagata Prefecture.
When poured into a glass, a sweet, elegant ginjo aroma, though not strong, is wafting in the air.
When you take a sip, you will first taste a gentle, mellow sweetness and umami. After that, you will feel the tangy and sharp acidity, followed by a deep bitter aftertaste. This too is delicious.
