First of all Rikuu 132, 35% polished, 13% alcohol by volume It says "no additive yeast", but isn't it rare to find a Shinsei that doesn't use No. 6 yeast? I drank it thinking Wow, this is 😲! It's aggressive. ❗️ Sourness, sourness, sourness & wooden vat ‼️ A little astringency And a hint of sweetness. The acidity is not sour or chili. It is a pleasant, mild and firm acidity from the sake yeast. But the taste is not classical. I don't know what it is. I'm sure this is what sake is supposed to be like It was the kind of taste that makes you think 😊.
