100% Echizen Tsuru Ichjo (100% Echizen Taneri from the Tochio Terraces)
This brewery makes it from rice using the duck farming method.
It's one of my top ranked sakes in Japan.
I don't know how many bottles I've already had since I met them at Sake no Jin.
Compared to Yamashiroya, it is now relatively more affordable at department stores in the Kansai region. It has a fruity aroma and smoothness, and when you put it in your mouth, it is not prickly at all and you take it like water. When I serve ICHO to the table, I serve it with sashimi in my home.
