The mild apple-like aroma, the moderate sweetness and the gentle umami of rice spread with a clean acidity, and the slight spiciness and mild bitterness of the alcohol make the taste crisp and clean.
Slightly dry and refreshing, it is better served with a meal than as a stand-alone sake.
It went well with the Fuji lava-roasted bonito tataki we purchased at the Aeon Mie/Nagoya/Tokai Fair, Kanehisa's mini fish cakes, udon noodles in kombu broth, fried shrimp rolls with dipping miso and miso sauce, and tataki cucumbers.
