I went to a liquor store in Kannonji.
Sake from Hiroshima was here and there.
I was attracted by the name, the sake's fresh yeast yeast, and the fact that it is brewed in wooden vats, so I bought some. The owner of the sake shop told me that Saijo is famous for Hiroshima, but this is the only sake brewery in the north that makes its sake on higher ground.
When I paid the bill, I was asked what kind of sake I liked. I replied, "A robust one.
He replied that it would be good, and my expectations were high. I was told that the flavor of the sake would develop as it sits, so I decided to give it a try.
This one was quite to my liking.
It is firm and has good umami and acidity.
It can be served cold or heated.
