3. The mouthfeel is like that of a brewed sake, with the nose full of sake-like flavors and a dry taste. There is a subtle umami aftertaste, but more umami and acidity would be nice. Hiyoroshi, Yamadanishiki, 55%, about 1,700 yen, Otsuka Sake Shop in Honmachi.
