Yamakatsu
My first Ehime sake. It is a junmai ginjo-shu called "Satoumi no Kan" from Ume Nishiki Yamakawa Co. in Shikokuchuo City. It is made from 100% Omachi rice grown in Okayama Prefecture, which is part of the "Setouchi Kakigara Agri" project of the JA Okayama Group to preserve the environment through recycling. It has a sour taste and is very refreshing, making it a delicious sake that is easy to drink. It gives the impression of being perfect for hot summer days. The ginjo aroma is subdued, perhaps because it is drunk cold, but as you drink it, you can smell it softly and gently.
