It has a good balance of sweetness, umami, and acidity, and is refreshing in spite of its sweetness, making it a good match with meals, but also delicious on its own. It goes better with meat dishes than raw fish. It goes well with cabbage with salted kelp, straw-baked chicken skin, straw-baked chicken tataki, and chicken nanban.
