It seems to be made with isoamyl acetate yeast, and has a gorgeous melon-like ginjo aroma.
The first sip is refreshing, but it has a pungent, bitter, spicy flavor that you would not expect from the aroma.
However, the umami of the rice that spreads out from the spiciness is very juicy!
In a word, it is a bottle of "Onkyo Shinshin".
A sake that is very much like sake, but with none of the old-fashioned smell.
