IWA 5 was created by Richard Geoffroy, the fifth generation head brewer at Dom Perignon for 28 years. The result is a blend of sake that goes beyond conventional values and combines different elements to create a deeper harmony. With the precision of an orchestra, the orchestral structure, brewing techniques, Yamadanishiki, Omachi and Gohyakumangoku rice grown in different regions, and five different yeasts create the melody of "IWA 5".
IWA 5 doesn't have a perfect recipe, but evolves little by little and exquisitely, from one year to the next, creating new and different characteristics to create a new IWA.
