I've had a bit of a cold since yesterday... disinfected with beer 🍺 and shochu 😷 and revived ❗️ lol
And the usual weekend opening: ‼️🤭

When you open the bottle, the aroma is strong and fruity 🍎 Ginjo aroma 😁.
When I took a sip... it was a harmony of sweetness, umami, and a touch of bitterness 🧐.
It's a little bit unique taste.
...Most breweries don't have that much bitterness when you drink it, but this one has it from the first sip💦.
Before drinking it, I thought it would be like an aperitif...but this bitterness could be good with strong flavored meat dishes 🍖.
It's delicious... but personally I don't think it's subtle😅.
For a food sake, I would go for Hakurakusei or Hokusetsu by far.

Well, now for the fun part...day 2.
Sweetness, umami... and even the bitterness is up: ⤴️
I still don't think I like it that much 😭
But overall, I think it tastes better on the second day ❓
