I drank it for the first time this time, and it said that it was made entirely from Miyamanishiki, so I thought it would have a nice acidity, but... It is different from grapefruit, the bitterness comes first, and then the ginjo aroma spreads strongly, and it is a clear taste. I'm not a big fan of bitterness, so I wondered if it would be better to pair it with food. But unfortunately, I was eating out today, so I ate some of the brown sugar boro that my wife was eating... What a surprise! The bitterness is gone! LOL! So it was a sake that needed to be married with something after all... It was a sake that my current skill level couldn't handle...

On the second day after opening the bottle, there was a change... The bitterness is almost gone, and the sourness comes in its place... The aftertaste is rich and delicious, with a good acidity and a sharpness. It will be good with well seasoned Japanese food.
