It's so good! Last year I felt it was just sour (I'd been drinking sake for 6 months at the time).
I bought it again this year, and I like the aroma. The taste is sour, but it has more flavor than last year's? Does it have more umami? (It is possible that I am biased by the brewer's comment that this year's sake is the best! lol)
It has an acidity like a white wine, but it's not grapes! It's not a grape!
It seems to go well with Western food!
