＜Muscat, sweet and sour, firm and tasty
The aroma is pure rice-like deliciousness with a hint of muscat.
In the mouth, there is a gentle piquancy followed by a muscat-like fruity sweetness and acidity. After that, the umami follows and it is a surprise. Yum!
It is a clear junmai fruity. It has a strong flavor, but it cuts through quickly and has a beautiful aftertaste.
It has a sweetness, but it is easy to pair with food. When I paired it with red and white namasu, the vinegar brought out the sweetness of the sake. It cuts through the rich flavor and fatty taste of stir-fried lamb without being overpowered. It seems to go better with well-seasoned food than delicate dishes.
If I were to use a Ghibli analogy, I would say Lin from "Spirited Away. She is the older sister who takes care of Chihiro at the oilery. She is the older sister who is firm and kind.
