This Junmai Daiginjo is made from Shinomine no Omachi by Nara's Chiyo Shuzo.
It is said to be a special Junmai Daiginjo using two types of yeast: Association No. 9 yeast and Meiri yeast.
It has a mellow aroma typical of Omachi. It has a slightly sweet aroma.
Shinomine is a sake that I have tasted many times with a strong acidity, but...
The mouthfeel is smooth at first, and it is full of the umami of rice that is typical of Junmai Daiginjyo (Junmai Daiginjo).
I've never tasted a Shinomine with this flavor before 🤣.
The rice and yeast multiply to create a variety of flavors 🥰.
Once again I was reminded of the depth of sake 😊.
