＜Sashimi with rice, deliciously spicy, and a hint of herbiness.
Shinomine is a long time coming. This sake is from the Chiyo Sake Brewery in Nara. I am not very good with dry sake, so I don't usually order it. However, on this day, a yellowtail sashimi was served. It was a cold yellowtail from Himi. I had to have a sake to go with it.

The aroma is of subtle rice flavor.
The mouthfeel is smooth like water. The mouthfeel is smooth and watery, with only a hint of umami and a hint of alcohol. There is almost no sweetness or sourness. This is a sake with a clean dry taste. It is a beautiful sake.
When the temperature rises a little, the mouthfeel is full of umami. The aroma is also delicious. It was good at 5 degrees Celsius, but I liked it at 15 degrees Celsius.
And of course, it goes well with yellowtail. The fatty and delicious taste of the yellowtail is wrapped up by the deliciousness of the sake. It was delicious!
Strictly speaking, this is not Ghibli, but I can compare it to Gomon in "Cagliostro's Castle. The sharpness is sharp, and the umami is gradually absorbed.
