Today I received! My first Chikosei's Koshimine! A minor but good sake from Nihonmatsu, Fukushima Prefecture! It is famous for Fukuro-hozuri! It is made in a way that it is presented at the sake competition!
The aroma is mild rather than fruity, with hints of brown sugar and a little smokiness. The taste is dry with a mild sweetness. It has a good umami flavor and a nice sharpness. A delicious sake! A bit of bitterness is a characteristic or a concern, but... it is suitable for a medium-bodied sake. It seems to go well with dishes with strong flavors.
