Mr. Touji, the head brewer of the brewery, came to Wakasa. We had another long talk with him.
◉Wakasa Junmai-shu (pure rice sake)
The sake was apparently made for the Hanshin Department Store. The overall taste is rich, with a slight astringency from the sake and a punch from the alcohol content.
◉Wakasa Junmai-shu
The watering down of the sake makes it easier to drink, as it is less astringent and has a lower alcohol content than the original sake. The sake is easier to drink because it is less astringent and has a lower alcohol content than the original sake.
◉Wakasa Junmai Ginjo
Fruity and well-balanced.
◉Wakasa Tsuki Kiyoshi
A surprisingly refreshing hiyaoroshi with a lot of flavor.
Daiginjo Wakasa
With a rice polishing ratio of 38%, this is a clean, refreshing and superior sake. I think they said they don't do this polishing anymore due to the high price of rice.
◉Wakasa Pentagram Junmai Daiginjo
This is an export-oriented sake that was not available at the previous Moriguchi Keihan event because it had a serial number or something similar on it. I tried it at the Milan Sake Challenge and it won an award.
It is refreshing and has a fruity sweetness.
It is very expensive and the box costs a lot of money, but China doesn't allow paulownia boxes due to import restrictions, so they export it without a box.
The brewer was always very friendly.
