This is a series of comparison of the difference between Shinmasa's yeast No. 6 and ICHIHAKUSUISEI's yeast No. 7. First, let's start with the No. 6 yeast.
When the bottle is opened, there is a pleasant "pshu" sound. It has a slight gaseous feeling. In the mouth, a light acidity and green apple-like sweetness spread out, and it quickly cools down.
It is not only light, but also has a good umami.
It goes down smoothly with the nozawana I had prepared for the meal.
The kanji description of this sake was "Nama-no-genju" (raw sake), so I was a bit nervous about it, but what can I say? The freshness was great.
