This junmai ginjo-shu uses the currently popular Kochi yeast CEL-24. It is brewed with 100% Hyogo Yamadanishiki and 55% polished rice, using the brewer's technique.
The flower on the label is the Iberis flower, also known as "candy tufts. The name derives from the sugar candy-like white flower and the sweet aroma wafting from the flower. The language of flowers is "memories of first love and sweet temptation. Like the flower, this sweet limited edition sake has a harmony of elegant sweetness and moderate acidity. It is recommended to be served chilled or on the rocks. A new taste of Tosa Shiragiku.
