This is the middle of the "Ara, Naka, and Chukagumi" series, which are junmai ginjo carefully brewed in a small brewing process and separated by the timing of pressing in a traditional tank (fune). In the Arabashiri stage, the bags are still coarse and the sake is still lightly cloudy, but the bags gradually become more and more tight and the sake turns clear, which is the sign of "Nakagumi. Nakagumi
