Slightly acidic rice bran. Strong alcohol feeling.
Drink. Loosely, water. The acidity is moderate, but it tightens up in the mouth. The sweetness of the rice is loose. It is different from "pale". The persimmon tannin sits on the tongue. When you swallow it, it is a little lukewarm and clear stream.

Intense alcohol vapor! This is sake!
Drink. Dry. The dry taste. A pleasant sourness spreads to the mouth. A thin milky richness. It has a light bitter taste. When you swallow it, you will feel a lot of bitterness on your tongue. It does not interfere with food and is the best sake for evening drinking.
55°C
From night to midnight. The snow continues to fall without stopping.
Drink. The water is slightly milky. When you roll it and taste it, the light richness is wonderful. Tears of admiration. The sourness is not dull. Is it a traditional sake? It makes you wonder if it is a traditional sake. When it is swallowed, it is light. However, the mellow taste of rice is satisfying.
65°C
The rice has sublimated into fruit. Wonderful. Steamy and intoxicating.
Drink. Extremely robust and the dry aspect has disappeared. Rich like a ripe persimmon cooked down. The palate is not overwhelmed by the richness, but by the light acidity. When you swallow it, it is like water, but the acidity makes the aftertaste of the rice stand out.
It is honestly a good sake. It is not an exceptionally good sake. It is not impressive. It is a good sake that can be enjoyed with a normal evening drink.
We are not thinking of repeating it at the moment.
