The brewery is located in Oarai-cho and the brewer is Mr. Naohiko Sakamoto. The brewer is Mr. Naohiko Sakamoto and the toji is Mr. Tatsuya Ishikawa. He trained at Shinkame Sake Brewery, joined Takekizuru Sake Brewery two years later, and became the toji at Tsuki no I Sake Brewery in 2020. He is a very important man.
Tsukizuki no I Junmai Ginjo
A very well balanced sake, not too assertive, with just the right amount of sourness mixed in with a hint of sweetness. It is a good balance, and would go well with fish dishes.
I found on the Internet that there was a TV drama about a sake brewery called "Nanotsuki," based on a story by Keiko Sakamoto, the wife of the 6th generation brewer, Kazuhiko Sakamoto, who died suddenly and spent the rest of his life brewing sake with organically grown rice.
