Sake made with a low protein rice called Shunyo.
They say it makes a light sake, but the first sip feels like a spasm of tangles.
Very sharp.
On the second day, the sweetness comes out and the balance is very good.
The aftertaste is clean and not too acidic, so it can be drunk like water in a good sense.
I wanted to enjoy the changes a little more, but I finished the bottle.
Only 1,000 bottles are available at all distributors in Niigata Prefecture.
