It's Kaze no Mori ALPHA6 from Aburinaga Sake Brewery in Gose-shi, Nara!
Somehow I managed to hold out until this afternoon's live toast on Instagram 🍶.
ALPHA 6 is a Kaze no Mori, which is always brewed with No. 7 yeast, and was brewed with the donation of Shinsei's No. 6 yeast due to the relationship between Shinsei's brewer, Mr. Sato, and Aburanaga Brewery's brewer, Mr. Chobei Yamamoto.
In addition, this year they used white malted rice to increase the layers of flavor, and half of the white malted rice was from the Aburanaga and half from the Shinsei breweries.
Except for the yeast, the sake rice is 100% Akitsuho from Nara Prefecture, and the brewing water is the usual Kaze no Mori, which is very hard water from the Katsuragi mountain range. The 66% rice polishing ratio is a sign of respect for No. 6.
It was served cold.
When the cork was uncorked, it was full of more gas than usual, and when poured into a glass, bubbles were formed on the surface.
The appearance is clear even though it is unfiltered.
The aroma is very delicate, which is said to be a characteristic of the No. 6 yeast, with a clear koji aroma and a gentle sourness at the back of the aroma.
In the mouth, you can feel the gaseous sensation and the transparent sweetness of rice.
When you roll it over, the fine acidity becomes more pronounced, and the umami of the rice emerges behind it.
