The aroma is relatively mild. There is also a small amount of fresh lactic acid yogurt aroma. The mouthfeel is fresh and light. It has a firm citrus acidity reminiscent of crisp lemons and limes, as well as a little bit of refreshing lactic acidity. The low alcohol content gives it a refreshing and comfortable feel that is not unlike Hanabai, but with the richness and extractive flavor typical of Yamahai, and a clear, juicy, sweet and sour taste. Kind of like a refreshing white wine with a touch of acidity!
