Fukunoka is a rice suitable for sake brewing that was developed by Fukushima Prefecture over a period of 15 years. It is a new breed that draws its blood from Yamada Nishiki, the king of sake rice. It is said to be suitable for daiginjo sake because it easily contains the heart white required for sake brewing and is difficult to crack when polished.
When poured into a glass, it has a slight aroma like a pear. When you drink it, the first impression is a sweet taste. You can feel the mild sweetness and umami like a pear. The aftertaste is a crisp acidity. Overall, it is a well-balanced and delicious sake.
