<Rich sweetness, flavor, and bitterness... boom, boom, boom. The other day, I drank a "identical twin-breed sake" made by Yoshi of Fatty Gah Daizan. The only difference is the timing of pressing. The first pressing in February was the previous "YOSHI," which had a normal alcohol content of 15 ºC, and the current "TAKA" has a higher alcohol content of 18 ºC. The aroma is of sugar-sweet lactic acid, nuttiness, and alcohol. This seems to be very rich. The mouthfeel is smooth and smooth, with a hint of sweetness and acidity. You think, "Oh, this is a good wine, but it's only for a moment. The next moment, the sweet and tasty acidity is boom! And then, to top it all off, the umami-bitter-al also smacks you in the face! The sweet and bitter aftertaste lingers on for a long time. This is intense, but I don't mind it. Yoshi was strong, but TAKA is even stronger! If I were to use a Ghibli analogy, it would be Charles from "Laputa: Castle in the Sky. He is the macho eldest son of Dora. He's a brainy guy.
