Gagakuyo ~Rokka Rating 4.5 Rice used: "Koshitanrei" from Niigata Prefecture, polish: undisclosed, alcohol content: 13.5 This is the brewery's top product, brewed to be entered in the National New Sake Competition. Koshitanrei produced on Sado Island in Niigata Prefecture is polished to Junmai Daiginjo standards. It is brewed with great care using Kyokai No. 901 yeast. The aroma is fresh and refreshing, with an elegant and refreshing sweetness. The aroma is reminiscent of muscat and rum. The refined, clear mouthfeel is followed by a thickened texture and elegant sweetness. The combination of acidity and clear flavor that gradually seeps out from the three-dimensional texture is like crystal. There are no cloying flavors at all, and after swallowing, the wine disappears beautifully with a sharp sharp sharpness. As the temperature rises, the sweetness and umami increase in intensity, and a dense atmosphere can be enjoyed. A dessert sake. For white peaches. Also good with wasanbon style.
