Juhachimori Sake Brewery in Kojima, Kurashiki, is locally known as "Toohachi".
It is a junmai daiginjo-shu made from Asahi rice grown in Okayama Prefecture and polished to 50%.
Although neither the aroma nor the mouthfeel is strong, the deliciousness of Asahi rice seems to come out elegantly and gently.
It is a sake that you will never get tired of drinking, and you will find yourself drinking sake after sake after sake.
