This sake is made from pure rice with a pure sake base. It is brewed with contract-cultivated Yamada-Nishiki carefully selected from two villages in the highest special A district in Hyogo Prefecture, the birthplace of Yamada-Nishiki, and the famous water of Fushimi.
With carbon dioxide gas from fermentation and low alcohol content of 12%, it has a lightness that makes it easy to drink if you are not careful. It has a powerful flavor with the gorgeousness and minerality of Yamada-Nishiki.
Hinichi Brewery was founded by Hidehiko Matsumoto, who served as toji (chief brewer) of Sawaya Matsumoto. At the time, a post about the president and directors leaving the company was widely spread on SNS.
