59Takachiyo Junmai Ginjo Dewa Sanzu Unadjusted Nama Sake Rating 4.4 Rice: 100% Dewa Sanzu, Polishing ratio: 59% (flat polished rice), Alcohol: 16%, Yeast: Association 1801 The "59Takachiyo" series is a higher version of the "Takachiyo" series, using the same yeast (Association 18) and milling method (flat milling, milling ratio 59%), but bringing out the individuality of the raw material rice. While based on the medium body typical of Dewa Sanzu, it has the gorgeousness characteristic of "59Takachiyo" and a firm sweet tone. In the mouth, it is characterized by a rich rice flavor and a soft, gentle taste that rounds out in the mouth. The lingering fruitiness is also reminiscent of cherries. The convergence is a slightly bitter sensation.
