First, the aroma. You can feel the gorgeous ginjo aroma.
The first thing to taste is a firm sweetness. However, there is also a calmness that does not linger. I have never had such a hiyaoroshi before.
It seems that Gohyakumangoku produced in Nanto City, Toyama Prefecture, is used for this hiyaoroshi. As I worked in nearby Kanazawa for two years and have visited nearby breweries and wineries, I feel some nostalgia for the area.
I will have a small piece of grilled yellowtail kama with a side dish.
