Hearing that freshly pressed sake was for sale at 4:00 in the morning, I drove two hours down the road from my house to visit the brewery! The name "Kesashibori" is stylish! The koji rice is 50% and the kake rice is 70%. Dry, light nigori with a strong acidity P.S. When I drank it a week later, the curd was removed and the umami flavor came out.
