Kano
Botan no Hana Haru" from the special-order "Hanafuda" series. Junmai-shu brewed with Koshihikari rice grown in the rice field in front of the brewery by the toji and brewer in cooperation with farmers. This is a once-fired version with autumnal specifications.
It can be enjoyed cold, room temperature, or warmed up. I had it cold, and it has a very good balance of bitterness, spiciness, and acidity, just like the rice it is made from.
