<A fresh, cute, honest girl. This is the first type of Toyo Bijin I have ever seen. This is a joint project of four breweries, Toyo Bijin, Tosa Shiragiku, Garden Uguisu, and Mitsui no Kotobuki. The series' requirement is a low-alcohol, slightly effervescent sake with an alcohol content of 12-13%, where CO2 is, of course, carbon dioxide, the carbonic acid of slightly effervescent carbonation. Incidentally, this is Toyo Bijin's only low-alcohol, low-foaming sake. How does it taste? I'll have some. The aroma is mildly sweet and lactic acidic. The mouthfeel is a fresh pichi shuwa amapon. It has a lovely sweetness and acidity. The last part has a slight umami flavor, but overall it is light and straightforward. The aroma is mainly sweet, with a hint of umami and bitterness. Delicious! If we were to use a Ghibli analogy, it would be like Sita from "Castle in the Sky". She is fresh, cute and honest. Even pirates would clean up if Sita asked them to.
