It is neither fresh nor juicy nor particularly fruity. Yet, for some reason, it is "Amano-no-do in summer" that somehow exudes a mysterious charm. The Minase and Naruse Rivers, which originate in the Ou Mountains, create a fertile field in the Asamai area of Yokote City, and their underground water gushes out into the brewery of Amano-no-do Asamai Sake Brewery as "Biwanuma Kansen. This summer-only junmai ginjo sake has a clear taste like pure water and is brewed in the image of the spring water that flows out of the Land of Water. The combination of No. 10 yeast and Miyamanishiki produces a clear and refreshing taste, and the understated ginjo aroma that spreads softly in the mouth and the clean aftertaste gently produce a cool taste, just like the sound of wind chimes.
