We named it after the Toji (brewer) who carefully managed the unrefined sake as if he were handling a jewel, keeping in mind the balance between the blue of the corporate color and our main rice, Gohyakumangoku from Chiba Prefecture. Despite its low alcohol content, it has a combination of luxury, juicy fruitiness, and sharpness, and is a bottle that foreshadows the evolution of Kankiku.
