Yesterday's freshly opened wine had a strong gaseous feeling and was like champagne, but today the gas is gone and the freshness stands out. It's not overly sweet or fragrant, but it has a deep aroma, a slight bitterness, a slight sweetness, and a well-balanced, complex flavor.
It's an attractive sake that tastes different depending on what you put it on, whether it's yesterday or today, but no matter what, the aftertaste is as refreshing and easy to drink as after drinking water.
I wanted to taste it again tomorrow, but the 4-gallon bottle is already empty😝.
This time it was Omachi, but I would like to compare different kinds of Kiheiji.
