And since both acidity and umami fade after a short time in the bottle, it is best to drink it cold and drink it well as soon as possible. Even after opening the bottle, it is more delicate and loses flavor more easily than other sakes.
When drunk at its best, it was right in the middle of my favorites at 5. It has a good aroma, acidity, and umami, but it is very well-balanced, and each of them is not assertive. It does not go well with arame (rice wine), so it should be served with food. I think it goes well with other dishes besides Japanese food because of its aroma.
