Compared to Akabu's Yamadanishiki. The color has a light yellowish tinge. It has a banana-like aroma. The mouthfeel is sweet, juicy and smooth with a little gas. It is a little sweeter than Akabu, but both have a refined sweetness and umami, like Japanese sweets. Both are delicious, but Machida's is easier to drink. And it is also more cost-effective. I'm very satisfied 😁❗️
This time I paired it with white sausage, arugula and mustard. The acidity of the mustard matches well with the sweetness of the sake, which also goes well with the arugula's slightly habitual aroma. Maybe it goes well with salt-based stewed chicken or pork. 🤗
