May 11, 2022. Yuki Shuzo, a long-established sake brewery in Yuki City, Ibaraki Prefecture, burned to the ground. Two of the brewery's buildings, which had stood since the Edo period, were reduced to ashes. In the midst of such harsh reality, Michikozakura, a proof of the challenge of Michiko Urasato, the toji of the Yuki Sake Brewery, was carefully brewed in Hokkaido and a gentle flower bloomed. An active brewery master brews sake at another active brewery. Michikozakura" began with an unprecedented challenge. The same rice and koji used for Yuki Shuzo's popular "Yui Yui" were transported to the Sanzen Sakura Brewery in Hokkaido, where the toji took on the challenge of brewing sake with local brewing water and equipment. Just as everything was going well and the brewery was about to start the pressing process, a disaster occurred. Michikozakura" had been growing in the tanks of the Sanzen Sakura Brewery in faraway Hokkaido. Michikozakura is a rare sake that would never have been found if not for the daring challenge of Michiko Urasato, the brewery's chief brewer.
