This is the second bottle this evening. Shichibonjari Muyari Wooden Oke Brewing, Nama Hashimoto 2020✨.
This sake is made from 100% Shiga Prefecture Tamakagei and all pesticide-free rice polished to 60%.
The aroma is almost odorless and serene. On the palate, it has a natural lactic acidity and sweetness derived from the wooden casks used to make the sake, but it is also quite sharp and dry, making it a very good sake as a mealtime drink. It seems to be good when heated, so I will try it at a later date 🍶.
