Junmai Ginjo is rich in flavor, but the acidity tightens the overall taste and does not linger. The sourness lingers on the tongue until the end. The Ginjo has almost none of the sourness mentioned above, and has a clear, smooth mouthfeel in comparison. The flavors in the mouth flow like a spring breeze.
