Rare specs even for Shinsei, a fresh sparkling kijoshu.
It's corked, so you can't open it until you finish it, but I haven't been buying much sake lately, so finally!
The aroma is very acidic, but not lactic acid or some kind of frutz acidity, more like Shinmasa New Year's Shiboritate acidity.
Other than that, there's a slight smell of wooden vats, and none of the sweetness that you'd expect from a kijo sake.
The carbonation is still quite strong in the mouth.
Maybe it's because it's an unclouded sparkling sake like Tenkaeru Clear, but I think it tastes quite similar to it.
Kijoshu tends to be a little sweeter, but not as sweet as Tenkaeru 10th anniversary, I don't know if it was designed like this or if the taste has changed after a year.
I don't know if it was designed this way or if the taste has changed after a year, but if you're looking for sweetness, the Shifune type is more like kijoshu.
Well, it doesn't have the kijoshu-like characteristics that should be a feature of kijoshu, but it's a good sake if you think of it as a clear amaeruagashi.
Now let's compare it with the sparklings in this year's hanpukai!
