Shinsei is hard to come by, so there are plenty of other good sake without it! But it's still delicious when you drink it! LOL!
And it has a unique taste.
The acidity is clear, but delicate!
I noticed after drinking it that there was a recommendation on the back to age it, so I want to try that next time.
