It has more acidity than sweetness and a little bit of a schwashy feeling. I wasn't planning to drink it today, but I opened a bottle of my treasured sake because we had duck hot pot for dinner. I think this sourness goes well with fatty food. For example, steak🥩 or sukiyaki. The second day I opened the cork, I heard a popping sound and it was delicious. It is really delicious.
