As October is drawing to a close, I will enjoy the autumn of "Akagisan" again this year before the freshly squeezed sake arrives!
When the bottle is opened and poured, it has a calm, orangey aroma with a core of sweet and sour.
The palate is clean and light, and while it has the Akagisan character, the bright acidity and gentle sweetness like tangerine are typical of hiyaoroshi!
While tasting it, a mushroom-like matured flavor emerges from the back of the bottle, giving it a truly autumnal flavor.
However, the maturity also has the purity of "Akagisan" and is not too assertive, so you can enjoy it with a moderate sense of balance.
I have a feeling that the sweetness and acidity are just right, and this one is even more delicious than last year's.
I am looking forward to next year!
