Junmai Special Sake with 55% Rice Polishing Rate Murata-cho, Shibata-gun, Miyagi Prefecture, where the brewery is located, is lined with merchant houses made of earthen storehouses and has a long history of prosperity as a distribution center for safflower and other crops under the direct control of the Date family during the feudal era. Located at the foot of Mt. Zao and blessed with rich nature, the family's founder Saemon Juro took the name Onuma-ya and started brewing sake in Shotoku 2. Since then, they have been brewing high quality sake by hand, starting from the koji making process, and using the traditional cold brewing techniques. This HEAVEN & EARTH has the same specifications as the standard Ken-Kun-Ichi "Tokubetsu Junmai Dry", but it is designed to be a sweet fruity sake for women and young people. When poured into a glass, it has a modest sweet ginjo aroma. My first impression when I drank it was that it had a sweetness like that of a grape or apple. I think it is one of the strongest sweetnesses I have ever tasted. I wonder if this is also a characteristic of the rare sake brewed with 100% Sasanishiki... It's delicious!
