I went to Chiebijin's Nakano Sake Brewery after discovering that my business trip to Oita happened to be close by. I bought a bottle of Nama-juku, which is raw sake that has been slowly laid down for half a year, as a souvenir.
It has a flavor like aged wine, which is hard to believe it is made from rice. It has a rich sweetness with a strong umami flavor. The moderate bitterness is a nice accent that keeps you from getting tired of drinking it. We enjoyed it with pizza.
